Vegan Pancakes Recipe

Today’s a special day because I’m posting a recipe!

I’ve actually posted it on Instagram at the end of November but not everyone follows me or has it, so here it is after 2 months and a bit.

And you know what makes this recipe special too? It’s made by me, it’s good and… most importantly… I didn’t destroy the kitchen! Yep, it happened to me a couple of times.

It’s very easy to do and I ended up with many pancakes. More than in the picture.

So, you need:

  1. 800 ml coconut milk
  2. 1 tbsp walnut oil
  3. 2 tbsp unrefined brown sugar
  4. 3 cups flour
  5. 1 tsp bourbon vanilla sugar
  6. 1 tsp Himalayan salt
  7. 1 tsp baking powder

And now:

Whisk the liquid ingredients in a bowl and the powdery ones in another. Then put both into a single bowl and mix them until you get a homogeneous mixture. Take out a ladle and put how much of the mixture you want in it. Then pour it into a non-sticky pan and wait until you get a golden-brown color on the first side. When the first side is done, turn the pancake and wait for the other side to get the same color. After it’s fully done, you can top it with whatever you want. Right now, I like them without anything but everyone has different tastes.
